Dinner:

Cheese tortellini with White Beans, Tomatoes & Kale (p. 155, Sunset’s “30 min or less”).  “good”

Romaine salad with julienned chayote, tomatoes, and Citrus Balsamic Dressing (Vitamix recipe).  “This is the same dressing from yesterday?”  The garlic really kicks up after sitting in the fridge.

Freshly grated parmesan cheese & then a bowl of canteloupe, grapes & strawberries for dessert. ~750 cal before fruit.

Lunch:

Thin slices of ham served over julienned chayote baked with tumeric and red onion.  Spicy.  Over seasoned?  Confused dish.  Good wild/brown rice w sauteed onions, ‘shrooms, and red bell on the side.  550 cal.
